How can I make my carrots for my roast more interesting than the standard boiling?
Try roasting them. Take the whole carrots, wash them well (no need to peel), then toss in salt, pepper, some oil & chopped thyme. Line them up evenly in the tray & roast at 180°c until just cooked through. Slice into wedges and sprinkle over some toasted sesame seeds or fresh herbs like tarragon or parsley.
