The Ultimate Fish & Chips Recipe



Ingredients

2 Pieces of Fresh Haddock

200g Plain Flour

8g Baking Powder

275ml Very Cold Lager

Pinch Fine Salt


Method

1. Preheat your fryer to 190°c.

2. Combine the flour, baking powder and salt.

3. Whisk in the beer until just combined.

4. Dip the fish into the batter then hold over the bowl for a few seconds to drain any excess.

5. Drape the fish into the hot oil, pushing it away from you. Wait for 5 seconds before shaking the basket to release the fish from the frying basket.

6. Cook until a deep golden colour is achieved, then remove and place onto absorbent paper.

7. Serve with chunky chips, a good spoonful of mushy peas and your favourite sauce!

Push the fish away from you when cooking to avoid splashing hot oil onto yourself!


Do’s

Make sure you mix the batter just before you use it.

Make sure that your beer is VERY cold.

Make sure that your oil is preheated, if it isn’t hot enough then the finished product will be greasy.

Don’ts

Do not over mix your batter. If you work it together too much it will become gluey and stodgy
